Recipe: Simmered pumpkin with minced meat, Kabocha Soboroni
Step 1:
Bring the stock to the boil in a saucepan.
Step 2:
Add ground meat and cook for 1 minute. Skim if necessary.
Step 3:
Add chopped pumpkin, soy sauce, sake, mirin and sugar.
Step 4:
Cook until pumpkin is tender.
Step 5:
In a bowl, dilute the potato starch with 2 tablespoons of water.
Step 6:
Pour into saucepan to thicken sauce. Remove from heat.
Step 7:
Serve with chopped spring onions (optional).
