Cook the ramen noodles (204370, 204376, 204377, 204373) for 1 min 30 to 3 min 30 depending on the type.
In a bowl, mix 50 mL of ramen base — paitan (203533), shio (204072), shoyu (202401), miso (202400), or tonkotsu (200803) — with 400 mL of hot water (1:8 ratio).

Dissolve the Kansui powder (204796) in water, ideally the day before. Mix the Toku No.1 ramen flour (204795), salt, and alkaline water until you obtain a firm dough. Knead and let it rest, then roll out and cut into thin strips. Cook the noodles in boiling water until done.
The ramen flour, high in protein and low in ash, gives the noodles their elasticity and smooth texture. The Kansui Aka alkaline solution adds a light yellow color, as well as the distinct flavor and firm bite characteristic of authentic ramen noodles.
